Very Berry Lemon Trifle
- 1 package Iveta Lemon Scone Mix
- 4c seasonal berries
- 8oz lemon curd
- 1c heavy whipping cream
- 8oz whipped cream (homemade* or from can)
- 8-10 clear serving glasses
Preheat oven to 350
- To make the dough follow the instructions on the scone mix package
- Use the serving glasses to cookie cutter dough circles
- Place dough on greased baking pan and sprinkle with sugar
- Bake for 10-15 minutes
- Let cool then cut scones horizontally in half
- Layer serving glasses: 1 slice scone, lemon curd, berries, whipped cream . . . repeat layers and fill to top of glass
- Garnish with fresh berries and fresh mint leaves
- Refrigerate or serve and enjoy

Tip* Make homemade whipped cream by whipping together heavy whipping cream and a splash of vanilla extract
