Baking Questions
Can I substitute something for the heavy whipping cream when I make the scone mix?
To achieve the light, moist texture that distinguishes Iveta scones from other mixes it is best to use heavy whipping cream. However, a great non-dairy substitute is cashew cream (see our recipe section for instructions on how to make it).
Can I make the scone dough the day before I serve them?
Yes, you can make up the dough and wrap it in plastic wrap. It will hold in your refrigerator for 2 or 3 days.
Can I freeze the scones?
For best results we recommend that you mix the dough, then bake, without freezing. However, many of our customers mix and pre-form the dough then freeze it before baking, or bake the scones, then freeze them.
I followed the directions on the scone mix, but it didn’t come out right. What did I do wrong?
Our scones are very easy to make and when there is a problem it is usually because:
(a) “heavy” whipping cream wasn’t used. There is “whipping cream” and “heavy whipping cream”. Heavy cream has the higher fat content necessary to produce a light and moist scone. The fat content also varies among brands - use the better quality cream.
(b) a measuring cup wasn’t used. The recipe calls for 1 cup (8oz) of heavy whipping cream. The 8oz cartons sold in grocery stores do not always contain 8oz.
(c) the oven temperature was wrong. The temperature readings on built in oven thermometers can vary. We recommend using a separate thermometer placed in the oven.
What are the best uses for your products?
Our baking mixes are very versatile. They make great breakfast treats and grab-n-go snacks or use them as a base for a quick and easy gourmet dessert (see our recipe section for ideas).
Are there any special instructions for baking at high altitudes?
We have used our mixes at altitudes up to 5,000 ft without any problems. At higher altitudes the liquid evaporates faster so you might add a little more heavy whipping cream, increase the oven temperature by 15-25 degrees and extend the baking time until the scones are light brown (to test the scones insert a toothpick in the center of the scone; if it comes out clean they're done).
