Cashew cream is an excellent substitute for heavy whipping cream and works perfectly with all Iveta scone mixes. For anyone who cannot, or chooses not to use dairy, cashew cream is an ideal solution.
- 1/2c raw cashews
- 1/2c water
- 1 tsp honey or agave (optional)
- Soak cashews in water for at least 2 hours. This softens them and also activates healthy enzymes that makes them more nutritious.
- Place in a food processor or blender and blend until smooth
- Makes approximately 1-1/4 cups of "cream"
