Chocolate Cheesecake Bars
- 2 bags Iveta Double Dutch Chocolate Muffin Mix
- 8oz butter
- 3oz shredded coconut
- 4oz pecans
- 16oz cream cheese
- 3.4oz sugar
- 2.2oz brown sugar
- 2tsps vanilla
- 2 eggs
- 1.5c heavy cream
- 14oz chocolate chunks
Preheat oven to 325
- Chop pecans and coconut in small cuisinart, and combine in mixer with cupcake mix and butter.
- Press into foil-lined and sprayed 9”x13” pan and bake for 10 mins
- In mixer bow, beat cream cheese, both sugars and vanilla until smooth, then beat in eggs
- Spread on to cooled crust and bake for 10mins. Cool completely.
- Heat cream until bubbles just start to form, and pour over chocolate chunks. Stir slowly until totally smooth and pour over cream cheese layer. Let set in fridge.
