Double Chocolate Cake

Double Chocolate Loaf Cake

  • 228g butter
  • 260g brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 180g chocolate chunks, melted
  • 200g flour
  • 6g baking soda
  • 24g cocoa powder
  • 9oz strong hot coffee (2 shots espresso then enough coffee to make 9oz)


Preheat oven to 350

  1. In mixer with paddle attachment, cream together butter and sugar, then beat in eggs and vanilla
  2. On low speed, mix in melted chocolate
  3. With the mixer on low, alternate the dry ingredients with the coffee, beginning and ending with the dry ingredients
  4. Line loaf pan with foil and spray, bake for 30mins, turning halfway through. Turn down the oven to 300 and bake for another 15 mins


  • 3/4c powdered sugar
  • 1 shot espresso

Whisk espresso into powdered sugar until the glaze is pourable. Drizzle over cooled cake

Yield: Approx 8 slices
